His talk will share a general view of the digitalisation of vacuum-cooked processes, and how they are applied to the new business models based on this technology.
Developments in the personalised parameters of the machinery throws up new horizons of organisation and organised functioning: what we are talking about here is the standardisation of processes. The Marukagastro universe introduces original amusing cookery which shows respect for the initial artisan producer, protects original information, and gives added value to the items it produces.
Our QR coding system helps us trace the origin of the product, map out the phases in its transformation, and even ascertain where it was eaten and its level of quality. This system is fully adaptable to the various types of gastronomy, from signature cuisine to a standardised organised catering offer, and it is naturally a tool for the 5th controlled-quality range.
