Originally from Japan, wagyu is also bred in Burgos. The variety is bred there and they also know how to cook it, as chef Óscar Alonso Varga will be demonstrating.

The chef and owner of Carmen Restaurante in Burgos, Óscar Alonso Varga, will be cooking a stew of tripe, snout and cured "cecina" beef, all from wagyu beef which originated in Japan but is now produced by a livestock business in Burgos. 

An elegant, healthy, ultramodern recipe, describing the province and the life and professional times of Alonso Varga, a chef who loves his native region and its history, and does not hesitate to add in the very best influences.
