Lucía Freitas' on-stage sensitivity. A talk for an understanding of how to cook and feel, by the grande dame of Galician cuisine.

This is the idea: to check out Lucía Freitas. The Galician chef will be at Gastronomika to bare her soul and demonstrate her gastronomic essence. She will be talking about herself, her tastes and her way of doing things, and also about "the real protagonists of the gastronomy ecosystem: female producers, women who work with the best produce and bring it to our kitchens". 

An exercise in self-analysis which will also look towards the future to give Freitas an inkling of where she thinks she will go. She is bound to go for territoriality. “I'll be cooking and demonstrating my cutting-edge version of ‘Caldo de Gloria’, a humble recipe which in Galicia is associated with the exercise in survival, scarcity and sustainability described by Rosalía de Castro in her poem “Miña casiña meu lar".
