The chef of La Tasquería will delve into the gastronomic potential of beef tendon beyond stews.

The talk by the "offal maestro" will study the applications he has discovered in recent years for beef tendon. Estévez will use his cooking to demonstrate that there is life after the usual recipe of the humble tendon stew.

He will do this with "beef tendon stew on crunchy focaccia flatbread with cockles", in which the tendons look rather like razor clams, horse mackerel or shrimp tortilla.
