The "txuleta" and its muscles

The grill man at Laia Erretegia will be explaining how to separate a beef chop's muscles to present them on the plate.

The winner of the National Grill Competition at San Sebastian Gastronomika 2015 is back at the congress, this time around to show how he works in his kitchen, with a special focus on separation of the chop's muscles to be presented separately on the plate.
