Promising crops and fungi

The chef of Murcia's Local de Ensayo restaurant will be at Gastronomika to report on his work with fungi and the growing of seeds of varieties in danger of extinction.

López will touch on the working philosophy he applies to fungi at Local de Ensayo, and more specifically, his work with desert truffles or "turmas" (Terfezia claveryi), a wild species found in the Region of Murcia, the growing of which Murcia University's Botany Division has now domesticated as a worldwide pioneer milestone. 

The chef from La Mancha will also be talking about his ecological plantation Los Praos, which is developing different kinds of crops with seeds of varieties in danger of extinction, a project known as "Promising crops", because they have the potential to adapt to climate change.
