The essence of the Atlantic in El Bierzo

The sea from the perspective of a chef inland. Samuel Naveira, a chef from El Bierzo, will be displaying his sea and mountain in different sections of sea bass.

The gastronomic research conducted by chef Samuel Naveira in a search for the origins of his native region, El Bierzo (León), has led him to work with products and producers that attempt to preserve their surroundings for the sake of a better future. Among these, although Ponferrada has no sea, the "Aquanaria" sea bass, because 500 million years ago El Bierzo formed part of a Paleozoic sea near the South Pole, in close proximity to the large continent Pangea.

On this premise, Naveira's talk will focus on the essence of the taste of the sea from the perspective of a chef inland, demonstrating the versatility of his cooking of different sections of sea bass. This will be accompanied at all times by notes on the fields and mountains of El Bierzo.
