How a Spanish chef living in Glasgow analysed Scottish gastronomy and adapts his own cuisine to fit in with the British public.

Miguel Ángel Mayor, the Barcelona chef who reaped success in Valencia with Sucede*, cooking up all the periods in the city's history by way of a laudable research project, has been in the United Kingdom for a year, as "another way of understanding gastronomy".

A disciple of Ferran Adrià, Mayor now runs the kitchen section of a business group with some twenty outlets in Glasgow, and he will be using his talk to report on the situation of the sector in Scotland, and how he had to adapt his cooking to bring in cocktails, "an essential part of the culture of this country".
