From raw to cooked

The Mugaritz chef will be explaining how he has conceptualised his new restaurant Muka, which is taking up the torch from the defunct Ni Neu, also in the Kursaal building.

On the subject of the grill restaurant Muka recently opened by Andoni Luis Aduriz in San Sebastián, the local man will share his reflections on fire as a catalyst and the inspiration for creative processes.

The head man at Mugaritz will explain his understanding of this "captivating element in all its forms and intensities: embers, flame, grilling, smoke, ash ...", fire that "has shaped our culture and identity. It enabled us to cook, and cooking enabled us to share and celebrate". Aduriz will be on stage at Gastronomika to celebrate.
